本发明公开一种负载噬菌体的丝胶蛋白微凝胶的制备及应用，属于食品保鲜技术领域。本发明所述的能够负载噬菌体的丝胶蛋白微凝胶是利用1‑乙基‑(3‑二甲基氨基丙基)碳二亚胺(EDC)结合机械剪切法与高温高压法提取的丝胶蛋白溶液制备而成。本发明所述的微凝胶冻干后浸入到噬菌体增值液中得到的负载噬菌体的丝胶蛋白微凝胶能够显著提高噬菌体的储存稳定性，并能够有效延长牛肉的保质期，且制备方法绿色简单安全，应用前景广阔，同时也为噬菌体的高效应用开辟了新的领域。
