本发明提供了一种乳制品用海藻酸钙包埋功能油脂微胶囊的制备方法。与现有技术相比，本发明提供的制备方法在剪切微通道内成型包埋微球，并将Ca以CaCO的形式包裹在油中形成连续均匀的油包水微球，再在固化液中与食用级有机酸反应释放Ca，与海藻酸钠反应生成形状圆润、尺寸均一的海藻酸钙包埋功能油脂微胶囊，该方法操作简单，制作成本低，利于实现工业化量产。
